Baked Buffalo Cauliflower Dip

It was requested to come up with a creamy buffalo cauliflower dip that didn’t have cheese or cream cheese. So I gave it a whirl and oh my, this is dip is SO tasty - you won’t miss the cheese.

Baked Buffalo Cauliflower Dip
Serves 4

Ingredients:
1 head of cauliflower, chopped into florets (about 4 cups)
1/2 sweet onion, sliced into thick slices
2 tablespoons Earth’s Balance buttery spread
2 tablespoons all-purpose flour (or gluten-free thickener like arrowroot)
1 cup Oatly oat milk
1/2 teaspoon garlic powder
2 tablespoons (or more) Frank’s red hot sauce
2 tablespoons nutritional yeast

Directions:

  1. Preheat oven to 425 degrees F.

  2. On a baking sheet arrange the cauliflower florets and onions. Roast for 20 minutes or until tender and lightly browned.

  3. In a medium sauce pan, melt the buttery spread. Whisk in the flour. Once combined and smooth, add the oat milk. Stirring throughout, bring the mixture to a boil. Let boil for one minute and then reduce heat to simmer. The sauce should be thickened. Stir in the hot sauce, garlic powder, and nutritional yeast.

  4. Transfer about 1 cup of the roasted cauliflower and all of the onion pieces to the sauce pan. Using an immersion blender, blend until sauce is smooth.

  5. Place the rest of the roasted cauliflower in a 9 x 9-inch baking dish. Pour the sauce over the top. Bake for 10 - 15 minutes or until the mixture is bubbly and lightly browned.

    Serving suggestion: Serve with celery for dipping or whole grain tortilla chips.

    Nutrition Facts (per serving): 150 calories, 6 grams fat, 1 gram saturated fat, 0 milligrams cholesterol, 280 milligrams sodium, 20 grams carbohydrates, 6 grams fiber, 7 grams sugar, 6 grams protein

Q: What motivated you to put together this new Ebook?

When I wrote my book The 101 Healthiest Foods For Kids, I had my own kids count up how many of the foods they liked. One kid scored pretty high, another lower, but it made me realize that I had not been serving some of these foods nearly enough--and some not at all because they're foods that (even though they're quite healthy) I'm just not wild about. We all need an encouraging, gentle nudge to serve certain foods to our families, whether that's because those foods have crashed and burned before or because they're foods the whole family isn't as familiar with. I wanted to make that process easier for other parents.

Q: Have you used some of these strategies with your own family?

Yes, I'm a former picky eater and married to a former picky eater, so I definitely started with him when we first began dating. I'd make him these tiny salads of just a few lettuce leaves, a bunch of croutons, and a ton of dressing. We still laugh about those salads, but now he eats big salads almost every night. That's where my "starter salad" idea came from that I talk about in the book. Picky eaters especially need baby steps to start with, so I made sure to include a lot of those in the book that I use with my own kids, like dicing mushrooms very small to put into ground beef for burritos.

Q: What has been the most challenging food for your family (or you) to incorporate?

Cauliflower! I'm still the only one in the family who likes it. I understand because it does have a stronger flavor (and aroma when cooked). But I'm hoping that one day it will break through with the rest of them.

Q: What is the best tip you can share with frustrated parents?

Forget the advice of "kids need 10-15 exposures before they'll try something". Because some kids will need MUCH more, and counting on a magical 10-15 exposures can lead to frustration and disappointment. The key is to keep exposing your kids to all kinds of foods, even if that just means those foods are on the table but they're not trying them. Exposure leads to familiarity, which hopefully leads to eventually tasting those foods--but it may be months, years, or decades. And that's okay!

Q: What is your favorite recipe in the Ebook?

Chocolate Tofu Pudding. Yes, kids can like tofu and it truly works in this chocolate pudding. It's a fun way to make tofu a little less intimidating!

CAULIFLOWER GNOCCHI

These cauliflower-based gnocchi from Green Giant are SO delicious! They are made with 40-percent cauliflower. Per serving they have 5 grams of fiber and 8 grams of protein. You can use the gnocchi as a side dish at a meal or as the base for a main dish. They cook up in boiling water in just a matter of 2 - 3 minutes!

For a protein boost, serve with grilled chicken or your favorite protein.

Pictured here, the gnocchi were served with a garden-fresh quick tomato sauce (See recipe below).

MEXICAN RICE

This cauliflower-rice dish is so simple and easy from Wegmans. The cauliflower rice is tossed with corn, green peppers, Mexican spices, and black beans. It is gluten-free. Each serving has only 60 calories and has 3 grams of fiber and 2 grams of protein. This goes great as a taco or burrito filling or even as the base for a “rice” bowl.

To heat it up, you can microwave it or just prepare it in a skillet with some olive or coconut oil.

This is also available in a Asian Style and a Garlic & Herb at Wegmans in the freezer section of the store.

Garden-Fresh Quick Tomato Sauce
Serves 4

Ingredients:
1 tablespoon olive oil
1/2 sweet onion, diced
6 roma or small tomatoes, seeds removed and chopped
3 cloves of garlic, minced
1/4 cup white wine
1 teaspoon dried oregano (or 1 tablespoon fresh oregano)
1 tablespoon butter or plant-based spread

Directions:

  1. In a skillet heat the olive oil, add the onion, tomatoes, and garlic. Cook down for 10 - 15 minutes until the tomatoes are tender and the onions and garlic are softened. Add the white wine and oregano. Bring to a boil and then simmer for 5 - 10 minutes.

  2. Finish with the butter or plant-based butter spread. Once melted, stir to combine. Then toss the sauce with pasta or gnocchi of your choice.

Roasted Cauliflower Hummus

Well, cauliflower has another incredible use… it can double as a hummus. For all those that think they don’t like hummus, dislike chickpeas, or eat low carb, this is the hummus for you!

Roasted Cauliflower Hummus

Ingredients:
5 cups cauliflower florets (about 1 large cauliflower)
1 tablespoon olive oil or avocado oil
1/4 cup tahini (sesame seed paste)
1 fresh lemon, juiced (about 2 tablespoons)
1/4 cup olive oil or avocado oil
1 teaspoon garlic powder
2 tablespoons water
sea salt and cracked black pepper

Directions:

  1. Preheat the oven to 425 degrees F.

  2. Place the cauliflower florets on a baking sheet and drizzle with oil. Roast for 20 - 25 minutes until the cauliflower is browned and tender. After the cauliflower is roasted, let it cool.

  3. In a food processor (working in batches if needed) add the roasted cauliflower, tahini, lemon juice, oil, and garlic powder. Adding water throughout blending and blend until smooth. If needed, add additional water (one teaspoon at a time) to help smooth the texture.

  4. Season with sea salt and cracked black pepper.

    Serving suggestions: Serve with sliced vegetables, roasted vegetables, or your favorite whole grain tortilla chips.

    Nutrition facts (per 2 tablespoons): 55 calories, 5 grams fat, 1 gram saturated fat, 0 grams trans fat, 0 milligrams cholesterol, 60 milligrams sodium, 2 grams carbs, 1 gram fiber, 1 gram protein

Quick & Simple Recipe!

Buffalo Cauliflower Bites

This recipe is quick and tasty! Some comments I have seen online is that these can be a replacement for wings, although for meat-eaters... I'm not sure about that? But what I do know is that they are VERY yummy and if you're like me and choose to eat vegetarian, they are definitely a delicious replacement for wings. 

Ingredients:

1 head of cauliflower, chopped into florets

1 cup of white wheat flour (or gluten-free variety)

1 cup of water

1/4 cup butter, melted

Hot sauce, to taste

1. Prepare a baking sheet with non-stick cooking spray. Preheat the oven to 425 degrees F.

2. In a mixing bowl, combine the water and flour until the mixture is combine (will be sticky). 

3. Then take the cauliflower florets and dredge them in the flour mixture until coated and place on baking sheet. Continue until all the cauliflower pieces are dredged and transferred to the baking sheet.

4. Bake for 10 minutes and the flip each of the pieces. Continue cooking another 10 - 15 minutes, until the cauliflower is tender and the pieces are lightly browned.

5. Combine the butter and hot sauce (I add about 1 - 2 teaspoons). Then toss the sauce with the cauliflower bites and serve. 

Serving suggestion: Serve with blue cheese dip and carrot sticks!
