Buffalo Chicken Wing Dip

Get ready for Football season with this creamy baked buffalo chicken wing dip! This twist on the classic is still full of flavor, and gets a protein boost, from the addition of plain Greek yogurt to the base of the dip.

Buffalo Chicken Wing Dip
Serves 8

Ingredients:
4 ounces light cream cheese (room temperature)
1 (12½-ounce) can of chicken, drained*
1 cup plain Greek yogurt
1 cup shredded light cheddar cheese
½ cup crumbled blue cheese
¼ cup hot sauce (or more to taste)

*Vegetarian substitution: Swap out chicken for two packages of seasoned jackfruit, like Kitchen & Love seasoned jackfruit.

Directions:

1. Preheat the oven to 350°F.

2. In a mixing bowl combine all the ingredients and mix together. Transfer the mixture to an 8 x 8-inch baking dish.

3. Bake for 20 to 25 minutes, or until the cheese is bubbly.

Serving suggestion: Serve the dip with sliced carrots, celery sticks, and/or multi-grain tortilla chips.

Mediterranean Loaded Fries with Tahini Sauce

These fries are delicious and loaded with all the right things - falafel, chopped red and yellow pepper, sliced olives, diced radishes and cucumber, and crumbled feta cheese. Plus then topped with this homemade magical tahini sauce!

This recipe calls for two frozen products - one from Alexia and another from Sol Cuisine, if you can’t find these brands at your grocery stores opt for similar products. Or you can make your own baked sweet potato fries and falafel too!

Mediterranean Loaded Fries with Tahini Sauce
Serves 4

Ingredients:
1 bag (15 oz) of Alexia Sweet Potato Fries
1 cup chopped veggies (red pepper, yellow pepper, cucumber, radish, onions)
1/4 cup sliced black olives
1 bag (10 oz) Sol Spicy Mediterranean Falafel or similar

Ingredients - Sauce:
1/2 cup tahini
1/4 cup fresh lemon juice
5 tablespoons water, plus more
1 tablespoon maple syrup
1 small garlic clove, minced
1/2 teaspoon sea salt

Directions:
1. Pre-heat an air-fryer or oven to 425 degrees F. Cook the sweet potato fries and falafel to the package instructions.
2. Meanwhile in a small bowl whisk together the tahini sauce ingredients and chop the vegetables.
3. Arrange the baked fries on a platter and top with vegetables, olives, feta, and falafel. Then finish with the tahini sauce AND serve with extra tahini sauce on the side.

Baked Zucchini Parm Fries

These zucchini fries are so tasty! They would make a great appetizer or even a great side dish for dinner.

Quick tip: For a gluten free version, opt for gluten free bread crumbs and gluten free flour of your choice!

Zucchini Fries
Serves 8

Ingredients:
2 zucchini (medium to large)
2 cups seasoned bread crumbs
1 cups shredded Parmesan cheese
2 cups whole wheat flour
2 eggs
2 tablespoons milk
olive oil

Directions:

  1. Preheat oven to 425 degrees.

  2. Prepare the zucchini by slicing into 1/4-inch thick strips.

  3. Arrange 3 bowls and prepare as follows: one bowl with the two eggs and milk whisked together, one bowl with the flour, and one bowl with the bread crumbs and Parmesan cheese mixed together.

  4. Working in batches take the zucchini slices and first dip in the egg mixture, then the flour, and then the bread crumb mixture. Arrange on baking sheet. Spray lightly with olive oil.

  5. Bake for 30 minutes, flipping the fries half-way through baking.

    Serving suggestions: These taste great on tacos, dipped in your favorite sauce, or even just as is!

Homemade Queso Dip
Serves 10

Ingredients:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups low fat milk
6 slices American cheese (e.g., Cooper)
1/4 cup salsa
2 teaspoons hot sauce*
Salt and pepper

*Adjust to your spice preference

Directions:

  1. In a saucepan, melt butter and then add in the flour and whisk together. Once combined add the milk and whisk, continue to cook over medium heat, whisking throughout.

  2. Once the mixture starts to bubble, let it boil one additional minute. Then remove it from the heat, add the sliced cheese. Once the cheese is melted, stir in the salsa, hot sauce, salt, and pepper.

Serve with whole grain tortilla chips and your favorite taco toppings like black beans, shredded lettuce, chopped tomato, sliced olives, and diced onion.

Quarantine Kitchen: Jalapeno Poppers

We had some jalapeno peppers in the refrigerator that needed to be used up and needed something fun to go with dinner, so jalapeno poppers is what we made! One key to how delicious they were is certainly the jalapeno peppers, KABOOM! Jalapeno Peppers.

KABOOM! jalapeno peppers are grown by Sunset. The peppers according to Sunset are described as a “full-flavored and juicier cousin to the traditional green jalapeno”. The bag they come in is pictured right. If you can find them at the grocery store, they are definitely worth buying.

Jalapeno Poppers

Serves 4

Ingredients:
8 Sunset KABOOM Jalapeno Peppers
4 oz light cream cheese
1 teaspoon garlic powder
1/2 cup whole wheat panko bread crumbs
2 oz sharp cheddar cheese, shredded

Directions:

  1. Remove the seeds from the peppers and cut in half lengthwise.

  2. In a small microwave safe mixing bowl add the cream cheese and microwave for 30 - 45 seconds to soften.

  3. To the cream cheese add in the garlic powder, panko bread crumbs, and cheddar cheese. Mix well.

  4. Stuff each pepper with the cream cheese mixture.

  5. Place on air fryer tray* and air fry for 8 - 10 minutes at 350 degrees F. Or until cheese is melted and lightly brown on top.

*If you don’t have an air fryer - you can bake these in the oven at 425 degrees F for 12 - 15 minutes OR until the cheese is melted and they are lightly browned on top.
